500g small new potatoes60g butterHalf a bunch of fresh corianderLevel tsp salt1 rounded teaspoon of chicken gravy granules ( or thickening granules)

Half a bunch of fresh coriander
Level tsp salt
1 rounded teaspoon of chicken gravy granules ( or thickening granules)
Prep to Cook: Colander, deep jug or bowl for microwave, chopping board, chopping knife, fork.
Prep:
1. Prep the potatoes:
Wash the potatoes
Place in a deep sided large microwave safe bowl or jug
Cover with cling film leaving a small gap for steam to escape
Cook on high for 6 minutes
2. Prep the coriander:
Wash the coriander under running water to remove and sandy grit
Trim leaves from the stems
Dice up the leaves to provide a heaped tablespoon of chopped coriander
Place the butter and salt ready to use
3. Return to the potatoes:
Remove from the oven after 6 minutes and leave to stand
Seal up the cling film to retain the steam ( take care!)
Lift the cling film and add the butter salt and coriander
Return to the microwave for 2 minutes
Shake the bowl
4. Prep to serve the potatoes:
Add 1 tsp chicken gravy granules to the buttery juices
Stir well and dribble this juice over the potatoes to glaze them
Serve hot
Easy cook coriander potatoes are cooked in the microwave in one bowl. This means hardly any washing up and tasty potatoes to serve with pies, curries and with salad meals.
Make these and eat them hot. Use up the following day cold with salad, delicious.
Cooks Know How: You will see how you can use the microwave to cook the potatoes. You will notice how the microwave cooks the potatoes from the inside out and that you need less water than when you boil them in a pan. You will be aware that you need to be careful when you lift the cling film from the jug or bowl that has been on the microwave because of the steam. You will be glad that you can use economy potatoes for this recipe and add some extra flavour to improve the potatoes.
